The evening in four facts

The medina around the table
Marrakesh was founded around 1070 as the capital of the Almoravid dynasty. Its red ramparts date from the 12th century and still run about 19 km around the medina, with 20 gates and 200 towers; UNESCO listed the old town as a World Heritage Site in 1985.
The classic Marrakech house, the riad, turns its back on the street: high outer walls surround an open courtyard garden, which gave the family privacy and kept the rooms cooler. The oldest documented examples go back to the Saadian period, the 16th and 17th centuries.
The city's craftspeople are known for carved cedar, which goes into riad doors and palace ceilings, for zelij tilework, carpets, and brass and iron lamps. In whichever room you are seated at Dar Essalam, it's worth looking up as well as across.
Moroccan cooking draws on Arab, Berber, Andalusi, Mediterranean and African traditions. Tagine and couscous are the best-known dishes, and a formal meal traditionally opens with a run of hot and cold salads before the main.

Six moments at the table
Two moments are fixed: the music at 8:00 PM and the dancers between 8:30 and 9:00 PM. The courses of your menu fill the time around them.
Dar Essalam is in the heart of the medina. Hotel pickup and drop-off aren't part of the booking, so settle with your party how you will get there and back.
You sit in one of the restaurant's several dining rooms, and each has its own architecture and history. Take a minute to look round before the first plates arrive.
Dinner opens with a starter on both menus. The restaurant lists some gluten-free and vegan dishes for guests who need them.
The musical show starts at 8:00 PM each evening. Guests describe a lively room, and one calls it very loud once the show is under way.
The standard menu has one main course and the extended menu has two. Reviews of the cooking run from delicious to average, and some mention slow service when the room is full.
The dancers perform between 8:30 and 9:00 PM, and belly dancing is part of the show. One guest describes a party at the end that took in the whole dining area.
The two show times are the ones the restaurant gives. Your own arrival and seating time appears when you check availability for your date.
